I remember making this years ago with my sister it's so delicious and would definitely win hearts at breakfast if you were to appear with a tray of this! It's not breakfast without bacon anyway right! You may see the title and think it's not healthy but by adding such a small amount doesn't worry me.
It's so easy to make too, first of all line up your bacon like little soldiers on a baking tray, don't forget to parchment paper, you don't want to be the one who has the scrub the tray! I use smoked streaky bacon, when you use it with the maple the flavour once cooked is out of this world! but regular streaky bacon will work perfectly fine too. Firstly the bacon is cooked on its own, just to get things going and then its time for the good stuff.
I like to brush the maple syrup on rather than drizzle it over as I find it give it a more even finish. Pop it bake in the oven to bake further. Once it's bubbling and crispy it's good to go. I like bacon that's not too crispy but a little crispy round the ages and tender elsewhere, not fussy at all! I love it just on some toast with avocado or with pancakes.
200g pack smoked streaky bacon
1 tbsp maple syrup
Heat oven to 180 degrees celcius (fan).
Line a large baking tray with parchment and then lay the bacon out in a single layer across the tray. Place in the oven and bake for 5 minutes.
Remove from the oven and brush with the maple syrup, pop back in for another 12-15 minutes until golden, caramelised and crispy!
