Matcha and white chocolate naked cake
If you think you'd be turned off by the green glow of this cake then think again, even if you don't like green tea you'll like this! It's insanely good, The sponge may have a green hue but it has a nice faint taste of matcha which doesn't overpower and it's super light and fluffy. Yep that icing is as good as it looks, creamy silky smooth. It's a super quick and simple cake to make for a party or weekend bash just add a few candles or sprinkles and away you go!
for the bases:
175g caster sugar
200g self raising flour
2 tbsp matcha green tea powder, plus a little extra to dust
for the icing:
300g icing sugar
100g white chocolate, melted
Grease and line the base of three 6'' sandwich tins and set aside. Preheat the oven to 160C fan.
Beat the butter and sugar together in a stand alone mixer (save your arms) until light and fluffy. don't miss this step and be patient or you'll end up with a dense flat cake!! once light and fluffy add the eggs one by one alternatively with the flour. I like to add a tablespoon or two of flour first to prevent the mix from splitting. add the matcha powder and mix again until smooth. Divide evenly between the tins and smooth out the surface with a small offset spatula (these make smoothing out cakes super quick and easy, the dream). bake in the preheated oven for 18-20 minutes or until golden and a skewer inserted comes out clean. (I find it helpful to put them onto a baking tray before they go into the oven as it makes it easier to move them around). Allow to cool in the tins for 5 minutes then remove and allow to cool completely on a wire rack.
Once the white chocolate has cooled, Beat the icing sugar and butter together until smooth and stir through the white chocolate until evenly incorporated.
Once cool, take two of the cakes and spread 100g of icing onto each of the layers, stack these and place the remaining layer on top along with 200g of icing, spread the top amount of icing all around the cake to give an even coating. Place the remaining icing into a piping bag fitted with a round nozzle.
Pip small amounts of icing to give dots all around to diameter of the cake, sprinkle with a little extra matcha powder, through a sieve, and dig in.
