I don' t know about you but on these warm mornings I'm not really into eating and if I am it's gotta be super light and fresh. I know how important breakfast is so in a bid to get something into me to start the day I've come up with this super light quinoa granola that is sure to get you ready for whatever the day will bring, along with getting a fill of your favourite berries alongside! light fresh foods and berries is what summer is all about right!
125g maple syrup
125g coconut oil
1 tsp vanilla bean paste
125g quinoa pops
100g rolled oats
100g ground almonds
75g pecans, roughly chopped
75g hazelnuts, roughly chopped
Heat the oven to 180C fan and line two large baking trays with parchment paper.
Combine the coconut oil and maple syrup in a small saucepan along with the vanilla bean paste over a low heat and heat until just melted.
In a large bowl combine the rest of the ingredients and stir until evenly combined, pour over the melted liquid and mix until evenly coated. Divide this mixture between the trays and spread out until even. Place in the oven for 10-12 minutes, turn and bake for another 10-12 minutes. The granola is best just left alone to cool to create the clumps of granola. Once cool put into jars with tight fitting lids.
