Young Buck Bucatini. Blue cheese Alfredo

Young buck. Look, it’s my favourite. 

This pasta, it’s a bloody simple dish, nothing else. I’ve used, non, fresh pasta, well, because I think the longer cooking time leads to a more flavourful starchy water which is the base for your sauce. BUT. make sure and get yourself a decent pasta please and thanks. 

I added some crispy onions, because I couldn’t help myself, and they’re just delicious.

Serves: 2 

200g pasta 

100g butter, cut into cubes 

25g parmesan, finely grated 

100g blue cheese 

Freshly ground  white pepper

Crispy onions, to serve 


Pop the pasta into a large pot of boiling water and cook according to packet instructions 

Transfer 250ml of the pasta cooking water to the sauté pan. 


Melt  the butter in a saute pan and add in about 250ml of the pasta cooking water a little at a time, then whisk in the cheese until it’s all melted.. Add the pasta to this, tossing to coat the noodles in the cheesy, saucy action. Season with the white pepper and top with the crispy onions.
