For those non iced coffee drinkers out there I've something for you! This weather is phenomenal but sometimes you need a little cool down, don't worry I've got your back. This iced tea is pure heaven, I pop it in the fridge in a jug once it's made and use as I like then, or you can share it either!!
3 rooibos tea bags
1 lemon, sliced
4 mint sprigs
4 tbsp sugar
150ml apple juice
Add the tea bags to 1.5 litres of water along with half the lemon and mint and the sugar to a large saucepan. Place on a high heat and bring to the boil, reduce to simmer for 3-4 mins then remove from the heat and leave to cool and refrigerate. I like to make it the night before I want it.
In the meantime fill an ice cube tray with the apple juice and place in the freezer overnight or until frozen. Once ready to go fill glasses with the chilled tea, place ice cubes in each glass along with some mint and lemon slices, and your favourite straws!
