750g baby potatoes
3 tbsp olive oil
2 tsp smoked paprika
1 tsp turmeric
2 tsp cumin seeds
2 tsp ground coriander
25g pumpkin seeds
small handful dill
small handful flat leaf parsley, roughly chopped
sea salt and freshly ground black pepper
Add the saffron to a small dish along with 2 tsp just boiled water, stir and allow to infuse for 5 minutes.
On a large baking tray toss together the baby potatoes, olive oil, smoked paprika, turmeric, cumin seeds, coriander and then add the saffron to this. Toss until the potatoes are evenly coated. Roast for 30 minutes, during the last 5 minutes of cooking push the potatoes to one side of the roasting try and add the pumpkin seeds to the empty side and cook until toasted and golden.
Once cooked toss together and add the herbs and seasoning, serve.
